Chicken Schnitzel w/ Potatoes & Pasta

Who doesn't love a good piece of schnitzel. However, you do need to be prepared for a carb heavy meal as it usually comes with potatoes and cheesy pasta. For me it's usually comes as a reward for a long work week or a week of heavy workouts. Sometimes I make it with spaetzle. However, if you don't have access to pre-made spaetzle or have time to make it from scratch you can get a similar feeling from little Annie's White Cheddar Mac & Cheese. Personally I like to spice mine up with a can of green chilies which you'll find in the recipe below. Hope you love it as much as I do.


Ingredients

5 large Yukon Gold Potatoes

1 TSP of Pepper

1 TSP of Salt

1 Egg White

1 1/4 C of Panko Bread Crumbs

4 Chicken Breasts

1 Box of Aunt Annie's White Cheddar Mac & Cheese

1 Can of Hatch Diced Green Chilies


Instructions

1. Preheat oven to 475°


2. Chop potatoes into fourths and place in a microwave safe bowl and season with salt and pepper.


3. Combine salt, pepper, and panko in a bowl.


4. Separate the egg white from the egg. You need to keep the egg white and then whisk it.


5. Salt and Pepper the 4 chicken breasts.


6. Dip each chicken breast in the egg mixture.


7. Then dip each chicken in the panko mixture and place on a foil covered pan.


8. Cook the Aunt Annie's pasta as instructed. Personally, I choose to skip the milk and double the butter. When you are adding in the cheese packet and butter/milk add in the can of green chilies.


9. Cook the chicken on the top rack for 8 minutes. Check the middle to make sure it is no longer pink.


10. Cover the potatoes in saran wrap and cook the potatoes in the microwave for 6 minutes.


11. Serve the schnitzel on top of the potatoes and pasta.
