Chili Peach Glazed Chicken

It's peach season and there are so many great things you can do with peaches like peach jam, tarts, and ice cream. What about something more savory? My answer is chili peach glazed chicken with brown rice. It keeps all the great flavors of peaches but the chili sauce helps bring in a more savory taste. Try it out for yourself and see what you think.


Ingredients

10 peaches, halved and pitted 1 Cup of sweet chili sauce 1 lime 5 green onions 1 Red Onion

1 Cup of Golden Raisins

2 Cups of Brown Rice Olive Oil kosher salt Freshly ground black pepper 2 lb. boneless chicken thighs



Instructions

1. Half the peaches and remove the pits.


2. Chop the red onion into slices and toss in olive oil until they're coated. Then season with salt and pepper.


3. Pat the chicken thighs dry and season with salt and pepper.


4. Cook 2 cups of brown rice as the package instructs.


5. Grill the chicken thighs on both sides until they are golden brown.


6. Meanwhile, add 2 of the peaches, the chili sauce, lime juice and zest to to a blender and blend until smooth.



7. Coat the chicken breasts in the glaze on both sides and cook for another 5 minutes.



8. Add the onions and the peaches to the grill and cook until grill marks form.



9. Add golden raisins to the rice and mix.



10. Serve by placing a bed of rice on a plate. Then places the onions and chicken on top. Spoon some extra glaze on top and add the green onion and peaches.
