Quick Peanut Butter Fudge

This week I was craving peanut butter and decided I'd make some homemade fudge. I love fudge because it's quick and easy to make. The hardest part is just waiting for it too cool and set so that it's ready to eat. I find myself checking it every 30 minutes to see if it's ready but it makes a great afternoon snack or dessert.


Ingredients

1 bag of butterscotch chips

1 cup of peanut butter



Instructions

1. Melt butter in a pan and add chopped onion, carrot and celery to the pan and cook for 5 minutes.


2. Add tomato paste and garlic and cook for 2-3 more minutes.


3. Add the lamb and break it up while it cooks until it's no longer pink.


4. Add the red wine and cook for 5-6 minutes until the wine is almost reduced.
