Quinoa Vegetable Soup

Being a little under the weather this week made me crave soup. However, I really wasn't feeling like chicken noodle. As I thought about what would be good the thought of vegetables and quinoas came to mind. I can definitely say that this soup hit the spot and as far as I'm concerned speed up my recovery.
Ingredients
1 Onion
2 Large Carrots
1 Zucchini
4 Celery Stalks
4 Cloves of Garlic
1 Cup of Quinoa
1 TBS of Cumin
1 Can of Cannellini Beans
1 12 oz Can of Diced Tomatoes
1 Box of Chicken Broth
1 Package of Kale
Instructions
1. Chop 1 onion and add brown them in a pot.

2. Chop 2 large carrots, 1 zucchini, 4 celery stalks and 4 cloves of garlic and add them to the browned onions.

3. Add the diced tomatoes and cannellini beans.

4. Add 1 cup of quinoa and 1 TBS of cumin.

5. Add the chicken broth and cook for 13 minutes.

6. Add in the kale and cook until it's softened. Then serve and enjoy.
