Sausage & Shrimp Gumbo

We went to New Orleans this year and I'm pretty sure that the two things that were always on our tables were gumbo and beignets. I decided I should try my hand at making gumbo as it's a great meal for anytime of the year. It's packed full of flavor and you can always add any type of protein that you like. Personally, I really like sausage and shrimp so that's what you'll find in the recipe below.
Ingredients
4 TBS of Butter
1/2 Cups of Flour
1 Yellow Onion
1 Green Bell Pepper
2 Celery Sticks
2 TBS of Garlic
1 Package of Portuguese Sausage
1 TBS Slap Ya Mama Seasoning
2 Bay Leaf
1 Small Can Fire-roasted Diced Tomatoes
4 Cups of Chicken Broth
1 lb. Shrimp
2 Cups of Rice
Salt & Black Pepper for taste
Instructions
1. Melt butter and then add the flour. Stir constantly until it is a light brown color.

2. Chop up the onion, bell pepper, and celery.

3. Add the chopped veggies to the pot and cook for 5 minutes until soft.

4. Chop the sausage and add it and the garlic to the pot and season with Slap Ya Mama seasoning.

5. Add the bay leaf, chicken broth, and diced tomatoes. Bring to a boil then reduce the heat and simmer for 1 hour.

6. While the gumbo is simmering cook the rice.
7. When the Gumbo is 10 minutes from being done add in the peeled/deveined shrimp.

8. Serve the gumbo on top of the rice and enjoy.
