Veggie Korean Japchae

This week I was really craving asian noodles but wanted a healthier option. I decided to give glass sweet potato noodles a try. To my surprise they're really delicious and will likely become a regular component of my weekly meal prep.

Recipe:
2 packages of Glass Sweet Potato Noodles
2 TBS of Honey
1/4 cup of Soy Sauce
1 TBS of Rice Wine Vinegar
1 TSP of Sesame Seed Oil
2 TBS of Garlic
1 Package of Oyster Mushrooms
1 Package of Shiitake Mushrooms
1 Red Bell Pepper
1 Package of Kale
Instructions
1. Make the sauce for the noodles by combining 2 TBS of honey, 1/4 cup of soy sauce, 1 TBS of rice wine vinegar, and 1 TBS of garlic.

2. Chop shiitake mushrooms, oyster mushrooms and red bell pepper and cook them in a pan with oil until mushrooms until soft. Then add 1 TBS of garlic.

3. Bring water to a boil and add in the sweet potato noodles. Cook until they're soft. Then drain and rinse with cold water.

4. Add the kale and noodles to the pan of veggies.

5. Add the sauce to the pan and mix everything together.

6. Leave on heat until the kale starts to wilt. Then serve and enjoy!
