Cioppino

Shepard's Pie

One of our favorite restaurants may not reopen once quarantine ends. So we bought a bunch of her seafood and made some Cioppino. Hope you enjoy it as much as we did.


Ingredients

1.5 boxes of Chicken Broth

1/2 a bag of mini colored bell peppers

5-6 Basil

1 can of diced tomatoes

1 bag of Frozen Scallops

1 bag of Frozen Mussels

1 bag of Frozen Clams

1 slab of Fish (we used tuna)

1 Onion

Salt

Pepper

1 cup white wine


Instructions

1. Combine the chicken broth, tomatoes, garlic, chopped up bell peppers and onion and bring to a boil


2. Defrost the scallops


3. Chop up the fish. We used tuna but you can use whatever your favorite is.


4. Add in the fish, mussels, clams, and scallops and cook until the clams and mussels open


5. Serve and enjoy.
