Soup Dumplings

Shepard's Pie

For easter, we gave our brother a bamboo steamer. So naturally we decided we should try our hand at making soup dumplings since they aren't easy to come by in El Paso. They're surprisingly easy to make you just need to plan 2-3 hours ahead of when you want them.


Ingredients

1 cup of Bread Flour

1/2 Cup of All Purpose Flour

1 1.2 TSP Canola Oil

7 TBS of Boiling Water

1 1/2 Cups of Vegetable Broth

1 Green Onion

1/2 TSP of Agar Agar Powder or unflavored Gelatin

1 TBS of Grated Ginger

1/2 Lb of Ground Pork or Beef

1/2 TSP of Salt

1 TSP Soy Sauce

1 1/2 TSP of Sugar

1 1/2 TSP of Rice Wine Vinegar

1 TBS of Sesame Oil

You'll also need a bamboo steamer



Instructions

1. To make the dough start by mixing the two types of flours together. You will need to combine the canola oil and boiling water together in a separate dish. Then add the hot water mix to the dough and knead it until it a dough consistency


2. Let sit at room temperature for at least 1 - 2 hours.


3. Meanwhile put 2/3 of a cup of vegetable broth in a sauce pan and whisk in the agar agar or unflavored gelatin until it is dissolved.


4. Pour the mixture into a shallow dish and put in the fridge until it's solidified about 30 minutes.


5. Make the filling by combining the meat, ginger, green onion, pepper, salt, soy sauce, sugar, sesame oil, and rice wine vinegar.


6. Once the gelatin/agar agar mix has solidified cut it into squares that are about the size of a pea and add them to the meat mix.


7. Cut the ball in half and Roll the dough out into two foot long log and cut it so that each is in 10 equal sized pieces.


8. Roll each of the 20 pieces you now have into disks that are 1/8 inches thick.


8. Run your roller over the edges of each disk so that they are thinner. This will make them easier to pinch.


9. Now put a TBS of the filling into each making sure each has some of the gelatin cubes. Then form each into a purse by pinching the edges together in a circular motion Once you have it all pinched together twist the top so it's sealed.


10. Place the bamboo steamer in a skillet that has 2 inches of boiling water. Put the parchment paper liner in the bamboo steamer and place 6 dumplings at a time in and steam for 8 minutes.


11. Serve and enjoy.
