Maple Bacon Salmon & Asparagus

Salmon is one of my favorite fish. There are so many ways to enjoy it wether it's sushi, salad, cooked on cedar plans. As I thought about what type of salmon i wanted this week, I thought the only thing that could make me love salmon more is if it had bacon on it. So here we are with maple bacon salmon with a side of asparagus and rice. I hope you like it.



Ingredients

3 lemons

2 TBSP Lemon Juice

2 Lb salmon fillet

Salt & Pepper to season fillet

1 TBS Dijon Mustard

1/3 Cup of Olive Oil

5 TBS Maple Syrup

Chives for garnish

1 TBSP Brown Sugar

1 TBS of Garlic

6 Slices of Bacon

3 TBS of Butter

1 package of Asparagus

White rice (optional if you want a side)


Instructions

1. Preheat ove to 400°.


2. Place salmon on top of the lemons and sprinkle with salt and pepper.


3. Combine the dijon mustard, oil, lemon juice, maple syrup, 1/2 TSP of garlic in a bowl and whisk together.


4. Cut the ends of the asparagus and put in a baking dish with a small amount of water in the base with the 3 TBS of butter and some lemon juice.


5. Start the white rice if you want it.


6. Pour the sauce you made in step 3 on the salmon, and bake the salmon and asparagus for 20 - 25 minutes.


7. Meanwhile, whisk maple syrup, brown sugar 1/2 TSP of garlic in a small bowl.  



8. Cook the bacon in a large skillet until brown on both sides. Drain the bacon fat if there is a lot.


9. Add the mixture from step 7 to the bacon and stir and cook until the bacon is coated.


10. Crumble the bacon and serve the salmon with crumble bacon pieces and chives on top.
