Meatballs with Roasted Veggies

This week has been a pretty hectic work week. So meal prep this week definitely saved me. This ones a quick easy recipe to make a bunch of portions of. It's also healthy and delicious. So you really can't go wrong.
Ingredients
1 Zucchini
1 Yellow Squash
1/4 Cup of Bread Crumbs
1 Pint of Cherry Tomatoes
1 Red Onion
Olive Oil
1/4 TSP Garlic Powder
1 TSP Dried Oregano
1/2 TSP of Cumin
1/4 TSP Cinnamon
1 TSP of salt
4 Cups of Cooked Rice
2 Lbs of Ground Beef
2 cloves garlic, minced
4 Tbsp of Fresh Chopped Parsley
Instructions
1. Preheat ove to 425°.
2. Mince 1/4 of the red onion.

3. Chop zucchini, yellow squash, red onion, and cherry tomatoes and drizzle with olive oil. Then roast in oven at 425° for 20 minutes.

4. Meanwhile make the meatballs. Combine ground meat, bread crumbs, parsley, red onion, garlic, oregano, cumin, cinnamon, and salt.

5. Cook the rice.
6. Form into ping pong sized balls.

7. Serve and enjoy.
