Mediterranean Fried Rice

About two months ago some of my friends and I went to San Diego for a wedding. As you can imagine we looked ahead of time to decide what places we wanted to eat. One of the places we had brunch at had Mediterranean fried rice and it was honestly one fo the best brunches I've ever had. So I decided to try and recreate it. Below is my version. I hope you enjoy it.
Ingredients
2 Lemons 2 TBS of Butter 1 LB of Ground Lamb 2 TBS of Garlic Pepper
Salt
2 TSP Ground Cumin
2 TSP Ground Coriander 2 Cups of White Rice 1 Pint of Cherry Tomatoes 1 Cucumber 1/4 Cup of Chopped Mint 1 Box of Feta Cheese
1/4 Cup Red Wine Vinegar
Instructions
1. Cook rice as packaging instructs.
2. While the rice is cooking, melt butter in the pan and zest lemon into it. Then add the lamb and cook until brown.

2. Remove the meat from the pan and place in a bowl and squeeze 1 lemon on it. Then mix to coat the meat.

3. Add the cooked rice to the pan you cooked the meat in.

4. Add the cumin, coriander, salt and pepper to the rice. Mix the rice and continue to cook until rice starts to brown.

5. Add the sliced cucumbers, tomatoes, red wine vinegar, and and juice from the other lemon into a bowl and mix.

6. Add the rice and meat into the cucumber tomato mix and stir to combine.

7. Add mint and feta and mix.

8. Serve and enjoy
