This week we decided to try our hand at making a dish we had a few months back. It's an afghani pasta dish that has great flavor and is full of spice. It's fun and easy to make. But make sure you have the time as it does take about 2 hours as the dough has to sit for 1.5 hours.
Ingredients
2 Cup & 4 TBS of Flour
2 Eggs
1/4 TSP Kosher Salt
5 TBS of water
1 Pound of Oryx or Ground Beef
2 TSP of Salt
2 Grated Onion
6 TBS of Minced Parsley
1/2 TSP Pepper
2 Cups of Greek Yogurt
1 TSP of Garlic
8 TBS of Unsalted Butter
4 TBS of Spicy Tomato Sauce
2 TSP of Paprika
Instructions
1. Combine flour, eggs, 1/4 TSP of salt, and water in a bowl and mix until dough forms. Then knead until the dough is smooth.

2. Cover the dough and let rest for 1.5 hours.

3. Meanwhile combine meat, grated onion, parsley, pepper and 2 TSP of salt.

4. Combine the yogurt and garlic and refrigerate until ready to serve

5. Combine the spicy tomato sauce, butter, and paprika. Cook on low heat once you start to create the manti.

6. Roll the dough out so that it is 1/16 inches thick.

7. Then cut into 2-inch squares.

8. Put 1/2 TSP of the meat on each square.

9. Form each into a triangle and cover with flower. Then boil for 5 minutes.

10. Serve with both sauces.
