Paella

Shepard's Pie

Our next stop during our culinary adventure is Spain. We visited Spain about 6 months ago and had so many great things from croquettes to grilled octopus. One of our go to dishes has always been paella and with quarantine going on we figured it was a good one to have this week. It's easy to do and the great thing about it is you can easily add or subtract ingredients from it. Below is our recipe for Paella.


Ingredients

2 Chicken Breasts

1 Package of Scallops

1 Package of Mussels

1 Package of Clams

12 Large Shrimp

1 package of Spanish Chorizo

1 cup of Peas

2 cups of Rice

1 TBS of Paprika

1 TBS of Oregano

1/2 a cup of Chopped Parsley

1 TBS Oregano

1 Bell Pepper

1 Yellow Pepper

1 TBS Garlic

4 Cups of Chicken Broth


Instructions

1. Coat the chicken in the paprika and oregano and set aside.


2. Next heat the oil in a pan and brown the chorizo.


3. Once browned, remove the chorizo and add the chicken to the pan.


4. Remove the chicken from the pan.Then add the onions, bell peppers, and garlic and cook until the onions brown.


5. Push the rice to one side of the pan and add in the and add the tomatoes and cook until the liquid reduces.


6. Mix everything that's in the pan and push to one side and then add in the rice. Cook until the rice starts to brown.


7. Add the peas, cilantro, chicken, chorizo, and shrimp to the mix and cook for 8 minutes.


8. Then add in the mussels, clams, and scallops and cook for 3 - 4 minutes.


9. Serve and enjoy!
