Stuffed Peppers

Shepard's Pie

Here's the recipe for our latest quarantine dinner. However, these stuffed peppers have been more than just a meal. They've been a favorite since childhood and solidified friendships.


Ingredients

9 Bell Peppers (Whichever Color You Like)

1 Pound of Hot Italian Sausage

1 Pound Ground Beef

2 Cans of Diced Tomatoes (1 Drained, 1 Undrained)

1 Cup of Cooked Rice

1 Onion

2 TBS of Garlic

3 TBS of Italian Seasoning

Salt

Pepper



Instructions

1.Preheat oven to 400°


2. Cut the tops off the peppers (keep the tops for later step) and remove the seeds. Then microwave for 3-5 minutes until they start to soften.


3. Cook the rice as package instructs


4. Chop up pepper tops and onion.


5. Sauté Garlic and spices in pan then add the Hot Italian Sausage and beef to a pan and brown.


6. Add rice, veggies, and diced tomatoes and mix. Make sure you drain one can of tomatoes otherwise you'll end up with too much liquid.


7. After you've let the mix cook for a few minutes. Fill each bell pepper with the mix then bake at 400° for 30 minutes until the peppers soften and they start to brown.


8. Serve and Enjoy.
